I invariably go back to the Rouleau de Printemps, an institution open more than 20 years ago in Belleville, which furthermore now has a second room (a revolution!), offering more chances of getting a seat. Between the spring rolls with peanuts and black sesame seeds, the veggie triangles or the bo bun, I have never heard of anyone coming out dissatisfied.
As spectacular cantinas go, there is also Dong Huong: ignore the noisy ambiance and the barebones service. Without any hesitation, head straight for the 2nd or 3rd room in the back, on the right. You must taste the grilled meats, to order with rice patties, aromatic herbs and carrot pickles.
