The opening of the pastry shop on La Jeune Rue is taking a little longer than planned, but Yann Brys (MOF, ex-Dalloyau) is already giving us a very promising savory preview.

Because between the softness of the almond cream and the acidity of the citrus fruit (orange, lemon, tangarine), the galette stamped with a swirl (logo signature) makes our heads spin…

And in keeping with this off-the-wall project, where the product is king, each ingredient has been minutely sourced from small producers (flours by Roland Feuillas, butter by Patrick Mercier, oranges and lemons by Michel Bachès…).
