Cheesecake
Ingredients :
160g graham crackers crushed or mixed in fine crumbs (use shortbreads or speculoos cookies if need be)
150g soft butter
240g powder sugar
680g Philadelphia cream cheese, soft
2 table spoons of liquid vanilla extract
3 eggs
120g fresh cream
Step 1. Mix the cakes, the butter, and 50g of sugar in a bowl. Sprinkle the mix in a 20 cm diameter buttered mold. Make sure the mix goes up on the sides of the mold and press to keep in place.
Step 2. Whip the cream cheese to air it out. Add the additional sugar and the vanilla. Add the eggs one by one and then the fresh cream.
Step 3. Pour the preparation in a mold and cook one hour in a oven preheated to180 degrees. Turn off the oven, open the oven door and leave the cheesecake inside for one hour. Cool for at least 4 hours before unmolding and serving.

When you can't find Philidelphia cream cheese in Paris, you can replace it with KIRI cheese.
