Polenta and Lemon Cake
Ingredients for 4 persons :
A high-sided pan 20cm in diameter
80g polenta
100g salted butter
100g sugar
100g almond powder
2 eggs
The zest and juice from one lemon
1 pinch baking powder
For the Frosting
20g sugar
The juice from two lemons
1 tablespoon of water
Step 1. Beat together the sugar and melted butter. Add almond powder and beaten eggs, lemon juice and zest, polenta and baking powder. Mix well.
Step 2. Pour the mixture into the previously buttered and floured pan. Bake in oven (180 °) for 30 minutes.
Step 3. Prepare the syrup by heating the sugar lemon juice and water in a small pan. Once the cake has cooled, drizzle with the syrup.
