Strawberry and mascarpone soup with lime
Prep time: 15min
Cooking time: 10min
Ingredients for 6 persons :
500g of strawberries
60g of sugar
60g of water
½ teaspoon of crushed vanilla bean
1 lime
150g of Mascarpone
1 lime
1 tablespoon of honey
Chopped fresh mint
Preparation:
Step 1. In a pan, make a syrup over low heat with the water, sugar and crushed vanilla bean, and then let it cool.
Step 2. Wash and hull the strawberries then blend them with the lime juice and the syrup, stopping periodically to achieve optimal consistency.
Step 3. Keep in the refrigerator.
Step 4. For the Mascarpone cream, mix the cheese with the lime juice and honey and keep in the refrigerator until you wish to serve it.
Step 5. To assemble the dish, pour the soup into a glass tumbler with a dollop of cream and sprinkle with chopped mint.
