Quinoa with endives, apples and walnuts
Ingredients for 8 persons :
Preparation time: 15 minutes
Cooking time: 20-30 minutes
-300g organic quinoa grains
-2 endives
-1slice of Comté cheese, 1.5 cm thick
-3 Granny Smith apples
-100g crushed walnuts
-3 tablespoons of olive oil
-1/2 tablespoon of mustard
-2 tablespoons of honey
-Juice from 1 lemon
-salt and pepper
Step 1. Rinse the quinoa and cook according to the directions on the packaging. Taste the quinoa and let cool before storing in the refrigerator.
Step 2. Rinse the endives and cut into small pieces. Peel the apples and cut them into cubes. Cut the Comté into cubes as well.
Step 3. Prepare a vinaigrette by mixing the 3 tablespoons of olive oil, 1/2 tablespoon of mustard, 2 tablespoons of honey and the lemon juice. Add salt and pepper to taste.
Step 4. In a large bowl, mix the quinoa with the pieces of endive, apples, Comté and crushed walnuts.
Step 5. Add the vinaigrette and delicately toss the salad. Add seasoning if necessary.
Step 6. Let it sit in the refrigerator for 1 hour and serve cold.
This salad can be prepared the day before. Perfect for summer dinners with the girls.
