Veal scallopini a la milanese
I am certain that when you read the title of this recipe you will have a doubt. Breadcrumbs, egg batter... not very sexy! well you are wrong because there is nothing more delicious than homemade breadcrumbs with a pinch of your current mood.
Ingredients for 2 persons :
2 rather thin veal scallopini
1 egg
1 pinch of thyme
4-5 lemon zests
4 whole-wheat biscottes
1 handful of pine nuts
1 mini pinch of Espelette pimento
1 tablespoon olive oil
salt, pepper
STEP 1. Flatten out the veal scallopini with a good tap.
STEP 2. Heat a pan without any grease and throw in the pine seeds until they are slightly golden.
STEP 3. Break the egg in a bowl and beat into an omelet.
STEP 4. In a clean dish towel place the pine seeds and the biscottes. Tie up well and with the help of a rolling pin crush the lot. This allows thicker and more crunchy breadcrumbs. If you wish to have a finer texture don't hesitate to put the mixture through a blender until you have the consistence of your choice.
STEP 5. Place the breadcrumbs in a hollow plate and add the lemons zests, Espelette pimento and the thyme. Mix the lot well. Salt and pepper lightly.
STEP 6. Heat the oil in a pan.
STEP 7. Dip the scallopini in egg batter then in the breadcrumbs and cook slowly on both sides.
