Coconut encrusted prawns
Prep time: 5 min
Cooking time: 10min
Ingredients for 4 persons :
20 de-boned frozen prawns
3 egg whites
125g of flour
100g of shredded coconut
15cl oil
1 lime
For the sauce: curry mayonnaise
Preparation:
Step 1. Beat the egg whites until foamy.
Step 2. Pour the flour on one plate and the shredded coconut on another plate.
Step 3. In a wok, heat the oil
Step 4. Dip the prawns in the flour, then in the egg whites and then in the coconut and to finish, cook them in the hot oil.
Step 5. Once one side is golden brown, turn over to cook the other side
Step 6. Once they are cooked, place them on an absorbant paper towel.
Serve them with a homemade curry mayo dipping sauce.
