An Alpine two-star
Now open at the foot of the slopes, the 1947 unveils a new setting conceived by Sybille de Margerie. With this exceptional place, awarded two stars by the Guide Michelin, Cheval Blanc invites the multi-star chef Yannick Alléno to imagine a new culinary movement.
For the 1947, the chef shakes up the codes in keeping with his Haute Cuisine spirit that he revisits with his bubbly creativity. The velvety watercress soup, stuffed leaves of Swiss chards, “topped egg” with its mint Chantilly cream, exquisite cheese from Roves signed Bernard Mure-Ravaud in Grenoble, the raw shrimp tartare, pizza with truffle, foie gras of duck vacuum cooked of the apple and mushroom Pithiviers are marvels. Just remove your skis and you are there!
