For 12 wafers:
12 thin slices of Parma ham
150g of freshly grated parmesan
1 box of salty fresh cheese (Philadelphia or St Môret)
½ bunch of chive
Parmesan wafers and San Daniele ® rolls
Preheat the oven to 210°C. On a pastry grid covered with baking paper, place one tablespoon of grated parmesan every 2 cm by spreading lightly in disc shape. Bake for 5 minutes.
Remove the parmesan chips very quickly and place on a pastry roll to give them a wafer shape.
Spread the fresh cheese on the ham and grind some pepper over.
Roll up each slice then cut into 2 or 3 small chunks.
Place 1 mini-roll in a wafer of parmesan and sprinkle with chiseled chives.
