Take a chic upscale brasserie on rue Cambon, opposite Chanel's flagship store, transform the first floor with a sexy boudoir theme and commission fab food agitator Frédérick E.Grasser-Hermé to add her unique touch to the menu. This recipe for success follows months of brainstorming with family Flottes, the owners who hail from the Auvergne region, and talented chef Nicolas Vernier (ex- Caffé Minotti when it was still a good address). The gourmet and exciting menu is now ready for century 21: luxurious caviar used very simply, served in a marrow-bone, veal blanquette, version Vernier: Arcachon oysters married to mini sausages, perfect linguini with tuna eggs and divine dessert custard pie flan à la Parisienne. Yes, it's a little on the expensive side (about 60 € à la carte, menus at 39 and 45 € for lunch) but then elegance has a price, there's no two ways about it!
