As a little wink to the upcoming American elections and new-yorker eats, a city he knows well, Monsieur Ducasse has put his grain of salt in a dish from « our neck of the woods».
Result ? A regionalist burger to be enjoyed in a completely retro and Art Deco setting, the bouchon parisien* of Alain Ducasse dedicated to the cuisine of Lyon… A must to be tested with an « old-fashioned » grandfather.
Imagine an oak board on which is served a big-mac in deluxe version: two mini-burgers anti-junk-food topped with good comté, farmer cheese and pistachio cervelas sausage. Instead of ketchup, a house mayo with shallots and watercress. And cherry on the cake: the little green petite with crispy bread croutons+ special fries as they make in Lyon, in keeping with the secret recipe.
It would be too bad to drink a coke when eating these little delights, so go for two glasses or really good wine. No need to hesitate between the Pape-Crozes-Hermitage, the Domain Gilles Robin, or the California star: Central Coast from the Nicky Hahn winery.
