The choice should be in keeping with the whims and tastes of each person.  With broiled bass, smoked aniseed salmon or petits fours, a white champagne such as our Aurore vintage, is ideal.

Rosé champagne is more gourmet, perfect with veal but also with red fruit desserts, such as a strawberry tart.
