A Dialogue Between Terroir and Palace Dining
For years, Gabriel Veissaire had dreamed of creating grand wine-focused dinners set in the majestic surroundings of Le Dalí. To craft a truly immersive, terroir-driven experience, he and Chef Clémentine Bouchon traveled to Domaine Bretaudeau ahead of the first event.
On March 19, guests attended the very first Winemaker Dinner alongside Jérôme Bretaudeau, who introduced his estate and signature wines. Three cuvées were served during the aperitif, paired with delicate bites designed to highlight their nuances.
The evening continued with expertly curated food and wine pairings, imagined by the chef after her immersion in the vineyard. Highlights included:
- Lightly cooked langoustine with button mushrooms and a pearled broth
- Roasted poultry supreme with Jerusalem artichokes and a lightly creamed vin jaune sauce
- Flame-grilled red mullet with pointed cabbage and rich cooking juices
These dishes elevated the estate’s cuvées—Charmes (2020), Solera (2015), and Statera (2022)—to perfection. To finish, the iconic Yuzu dessert by Cédric Grolet delivered a refreshing and unforgettable finale.

- Thursday, May 21: Meet Géraldine Godot from Domaine de l’Arlot, a pioneer in biodynamic viticulture. A few seats are still available (phone booking recommended).
- Thursday, October 15: Harvest season means a pause until this date, featuring Charles Perrin of Château de Beaucastel, an iconic Rhône Valley estate.
- Thursday, December 3: Xavier Monnot, committed to sustainable viticulture, will present his wines just in time for the festive season.
