Charbone: Parisian chic in its rawest form

Love at first bite! A new façade, an intimate setting and cuisine by Adam Bentalha: at 16 avenue de l’Opéra, Charbone has just opened its doors and is determined to put the pleasure of dining centre stage. Part of the Nolinski hotel, an address we already loved for its myBlend spa and rooms with their Art Deco elegance, the restaurant extends the experience in a setting inspired by the 1930s. With its elegance, golden lighting and attentive service, this is an address that masters the art of hospitality down to the smallest detail.

A chic and intimate atmosphere

From the moment you walk in, the tone is set: at Charbone, you step into a world of its own. Designed by interior decorator John Whelan, the space draws on the aesthetics of the 1930s, with elegant touches of Art Deco. Long candles on every table, stunning chandeliers, golden lighting and plenty of mirrors that make the space feel larger all come together to create a refined, intimate and almost cinematic setting. The attention to detail extends to the service, from the cloakroom to the little stand provided beside your table to keep your bag off the floor (#girlproblems).

The open kitchen brings movement to this intimate atmosphere without taking away from its cosy feel. But the real highlight is also the impeccable team in the dining room, passionate et attentive. Butter served as a whole block like a centrepiece, meat flambéed just a few steps from your table, bread still warm from the oven: every gesture is carried out with precision and a touch of theatre, without ever stealing the spotlight from the food.

Precise and generous French cuisine

At the helm of the menu, Adam Bentalha (formerly of the Ritz, Shangri-La Paris and Royal Monceau Raffles Paris) creates **French cuisine **that focuses as much on technique as on immediate pleasure, showcasing fine ingredients, precise cooking and carefully crafted sauces. To start, the foie gras served with brioche and pear confit (€34) gets things off to a delicious start, while the thin slices of smoked beef (€26) are a must-try. Those who love a great flavour pairing can also opt for the Darphin potato with caviar (€42), one of the restaurant’s signature dishes.

As for the mains, the cheeseburger (€34) ticks every box for indulgent comfort food, with a little “C” delicately drawn on the bun and shoestring fries served on a tray. The showstopper: the chateaubriand with pepper sauce (€52), flambéed tableside. And because a great restaurant experience doesn’t end with the main course, dessert continues the pleasure with a chocolate mousse served with a large spoon (€14) and a Madagascar vanilla crème brûlée (€12), both deliciously nostalgic. An address where attention to detail meets generosity, and where you come as much for the food as for the pleasure of a true dining experience.

Open Monday to Sunday, continuously from 12 pm to 10:30 pm.
