Ultra-indulgent financiers by Hugues Pouget

Hugues Pouget, who has just opened his very first solo pastry shop just steps away from Le Bon Marché, shares here his signature recipe, precise and easy to recreate at home. A rich, indulgent cake designed for lovers of sweet treats — and one you’ll quickly get hooked on, especially with a good coffee or a steaming cup of tea.

 

INGREDIENTS TO SHOP

Rest time: 2 h

  • 80 g all-purpose flour (T55)

  • 120 g almond flour

  • 200 g granulated sugar

  • 200 g extra-fresh churned butter

  • 20 g acacia honey

  • 7 free-range eggs

 

METHOD

In a bowl, sift together the flour, sugar, and almond flour.

In a saucepan, melt the butter until it turns into brown butter (beurre noisette). Add the honey, gently stir with a spatula, and let cool for 30 minutes.

Separate the egg whites from the yolks. Add the egg whites to the dry ingredients, whisking until smooth, lump-free, and fully combined. Then add the cooled melted butter and honey, mixing well.

Let the batter rest in the refrigerator at 6°C (43°F) for 2 hours.

Using a piping bag, pipe the batter into financier molds, preferably silicone.

Preheat the oven to 170°C (340°F). Bake for about 30 minutes, checking doneness with the tip of a knife. Unmold once baked.
