Looking for a fresh, light and healthy starter? This grapefruit labneh recipe is perfect both for aperitif hour and as a sharing starter, served with vegetable sticks for dipping or pita bread for spreading. Besides being delicious, grapefruit is naturally rich in vitamin C: just one fruit covers 100% of your daily needs. It also contains vitamins A, B1 and B3, as well as essential minerals such as potassium and magnesium. In short, a recipe that is just as vitamin-packed as it is delicious.
INGREDIENTS
Serves 6 :
- 1 Florida grapefruit
- 400 g labneh
- 1 small garlic clove
- 1/4 red onion
- 1/4 pomegranate
- 1 tsp honey
- 40 g pine nuts
- 1/2 tsp Espelette pepper
- 1 tbsp sumac
- 1 small bunch dill
- 1 small bunch chives
- Olive oil
- Salt, pepper
- 1 good flatbread such as pita, for serving
METHOD
Peel the Florida grapefruit and cut out the segments, making sure to collect the juice in a bowl as you go. Then squeeze the membranes to extract the remaining juice.
Remove the germ from the garlic clove and finely chop it.
Place the labneh in a mixing bowl, then add the chopped garlic and 1 tablespoon olive oil. Season with salt and pepper.
Prepare the dressing by mixing the grapefruit juice, 3 tablespoons olive oil, the Espelette pepper and the honey. Season with salt and pepper, then set aside.
Spread the labneh onto a shallow serving dish as you would for a mezze, then sprinkle with sumac.
Arrange the grapefruit segments evenly over the surface.
Peel and finely slice the red onion. Remove the seeds from the pomegranate and toast the pine nuts.
Scatter the red onion, pomegranate seeds and pine nuts over the labneh.
Pour the dressing over everything, then add the finely chopped dill and chives.
Serve with a good flatbread such as pita.
