Now a five-star hotel and a member of Relais & Châteaux, this 19th-century Directoire-style building stands in the heart of a 40-hectare park along the Eure river, offering absolute tranquility. The 30 rooms and 9 suites are spread across the castle and three outbuildings. Our favorite? The 41 m² junior suite featuring the castle's only balcony, suspended over the moats overlooking the park. We love the classic, elegant atmosphere where period decor has been preserved to keep the house’s soul intact. The menu at Bistrot Martin, the onsite restaurant, evolves with the seasons, highlighting the best local terroir and vegetables from the garden with a creative touch: perfect egg with lentil cream and smoked emulsion, truffle "blésotto," roasted cod with butternut grain risotto... Enjoy your meal in a chic country inn setting or, in warmer weather, on the terrace overlooking the orchards. Finally, note that Saturdays feature a barbecue and Sundays offer a Grand Brunch from 12 PM to 3 PM. As for the magnificent park, designed over 30 years ago by Jacques Wirtz and boasting a rose garden with 250 varieties, it is worth the trip alone! Les Hauts de Sancerre

Opened in July 2025, this 5-star hotel is perfect for a weekend out of Paris. It is located in the Château de Sancerre, a private residence since the late 19th century, overlooking the Berry hillsides with a park offering stunning views of the Loire Valley. This historic site spans 4.5 hectares and includes four buildings, including the Château de Sancerre and the Tour des Fiefs, creating a concept that blends the comfort of a vacation home with high-end luxury. Owners David and Audrey commissioned interior designer Jérôme Lescrenier for the decor. He preserved the original volumes while adding contemporary elegance. Natural stone, noble woods, and soft-toned textiles create a soothing atmosphere. In the eight suites (26 to 50 m²), every detail was designed to mix heritage with modern lifestyle. Bathrooms feature walk-in showers—some with bathtubs—and La Chênaie guest amenities. A second phase of work, planned for 2026, will see the opening of new rooms, a signature restaurant, a permaculture vegetable garden, and a landscaped pool. By 2026-2027, the estate will expand with ten to fifteen additional accommodations in the heart of the forest. The highlight: The dining experience orchestrated by Chef Arnaud Munster (Top Chef Season 15), offering a unique set menu. In 2026, the estate will also welcome l’Atelier des Cèdres, its future gourmet restaurant. La Folie Barbizon

This one-of-a-kind boutique hotel, opened a few months ago, charmed us immediately. We love its location in Barbizon, the mythical village where painters like Camille Corot, Théodore Rousseau, and Jean-François Millet settled in 1830, giving birth to the Barbizon School and prefiguring Impressionism. Imagined by duo Lionel Bensemoun (creator of Le Baron) and Nicolas Saltiel (founder of the Chapître Six hotel collection), this 4-star property is designed as an art gallery hotel. The experience starts upon arrival on the terrace with sculpted characters by Max Coulon. Artistic director Sarah Valente, alongside Marion Collard, invited twenty artists—designers, ceramists, painters, and sculptors—to create original pieces. In the common areas and each of the 21 unique rooms and suites, you’ll find sculpted headboards by Victor De Rossi, surprising eggplant-skin stained glass by Loumi Le Floc’h, and paintings by Pierre Rioufol... all alongside vintage furniture in a colorful environment (green, golden yellow, orange-pink, cobalt blue). The bathrooms with original ceramics are a delightful surprise. The best? The Suite aux Étoiles, a duplex family room featuring neon paintings by Andrey Zouari and a symphony of dark blue. A practical touch: boots of various sizes are available for guests in a room facing the garden—no more excuses for not exploring the forest! The highlight: A fresco by Papier Boulettes, made from construction waste from the hotel, adorns the restaurant wall. The carefully crafted menu celebrates the seasons and garden harvests through sharing plates. Casa Pertica

Tucked away in a lane in Ceton, an authentic Norman village near Nogent-le-Rotrou, this 1692 residence has been carefully restored by Kimberley and her parents to host charming guest rooms. The Artifoni family created Casa Pertica while preserving the ancient stone and authentic charm: within a 3-hectare park, three cottages and a suite opening onto the garden form this haven of peace. Ancient charm meets elegant decor, boosted by a dash of Italian hospitality echoing the owners' roots. Everything is there: a pool heated from April to October, a winter garden, fireplaces, exposed beams, solid oak floors, a fully equipped kitchen, 5-star luxury bedding, a ping-pong table, and a permaculture garden. It is perfect for savoring a weekend in the countryside. Fans of Italian cuisine will be delighted by the family trattoria, La Bergamasca! The highlight: Well-being is a priority here, with yoga in the park or naps under the trees. Les Jardins de Coppelia

This stunning 17th-century Norman manor, clad in wood and slate, opened in October 2019. Located 7 km from Honfleur and 15 km from Deauville, this 4-star hotel is nestled in the countryside surrounded by orchards, with the sea visible from the lobby and certain rooms. Pennedepie beach is just a few hundred meters away. The bright, contemporary decor contrasts beautifully with the manor's traditional exterior across its 27 unique rooms (18 to 50 m²), with 14 in the manor and 13 in the annexes. While they retain exposed beams and wooden floors, these classic elements are brightened by pops of color and designer furniture by Roche Bobois.
