Phéno healthy: the kale & gariguettes toast

They have just appeared on the market stalls and play the stars among the market gardeners. Gariguettes open the season for French strawberries.

All naturopaths will tell you: to be in good shape in the spring, you have to devour and stock up on seasonal fruits and vegetables. Zoom in on this incredible slice of fresh goat cheese , beetroot, kale and strawberries: an ultra instagrammable spring digest to devour for good health.

Start by toasting the slices of bread.

Then wash, hull and cut the gariguettes in half.

Remove the central vein of the kale leaves, mince these leaves, massage them lightly with your fingertips with a drizzle of olive oil, salt and set aside.

Peel the beets and cut them into very thin slices using a mandolin.

Cover each toast with fresh goat cheese, then garnish with kale, thin slices of beets, gariguettes and a few tarragon leaves.

Season with pepper and enjoy without further delay.
