The Mary Céleste is a long term whim. With my associates, we wanted to create an oyster bar in a very open space at the heart of a lively area that is easily accessible. We also wanted to offer a choice of cocktails and wines paired up with a creative cuisine. In order to so, I chose a long lasting friend as bar manager: Carlos Madriz, and it’s chef Haan Palcu-Chang qui that has set the culinary identity of our menu.
