The small paradise of healthy Parisiennes does it again. After its first address in the Marais, Yummy & Guiltfree, the specialists of healthy and gluten free waffles (often also with no lactose) have just opened a small tea on the Grands Boulevards.
This should rejoice gourmets after the holiday orgies. In short: the ideal spot to come have brunch or a tea-time snack this weekend (careful, no reservations).
The new gourmet sin of Parisiennes on a diet
In its totally adorable decor, one finds the signature of the gourmet label: waffles that are bothy healthy and food porn in a savoury version or the cult sweet recipes, served on a wooden stick with a small bow. It’s their furiously instagrammable visual signature, of course!
The great pastry chef Damien Cassart (ex Alain Ducasse, Daniel Boulud and Yannick Alléno) explores the gluten-free pastry like noone else and his waffles are topped with spreads, lemon-curd or caramel, the 3 with no lactose have become real Parisian best-sellers just like the Mont Blanc of Angelina or Pierre Hermé macaroons.
His latest lactose-free savoury creations are quite amazing: the “vegetal” option with soft mashed celeriac, seasonal pan fried veggies and beet pickles, just like the “Noix de Jambon” ham with cream of corn, mushrooms, Chinese cabbage, mustard. And let’s not forget the sweet kid sister with cream of pistachio.
