A burger like no other

We take advantage of spring to make delicious homemade burgers . For a change, the Pure Pyrenees sheep equation + duck aiguillettes is more than extra . To be tested without further delay.

For 2 people

Peel the onions . Reserve half an onion and thinly slice the rest into rings.

Heat a drizzle of oil in a pan and add the onion rings . Season with salt and pepper , add the vinegar , a pinch of salt and cook for about 5 minutes over low heat.

Chop the duck with the remaining half-onion , the garlic clove , the soy sauce , pepper and a big pinch of Espelette pepper . Form two patties.

Heat a pan with a drizzle of oil and cook the duck steaks for about 5 minutes on each side.

Cut the Pyrenees Pure Sheep into shavings using a peeler. Cut the hamburger buns in half. Spread the lower part with mayonnaise , arrange a few spinach leaves then the steaks . Cover with shavings of Pur Sheep Pyrenees . Add the red onion rings and serve with the other half of the bread and baby spinach .

Little extra: For a gratin effect, pass the steaks covered with the shavings of Pure Pyrenean sheep for a few minutes under the grill of the oven.
