Chef Adam Bentalha , former Ritz , Shangri - La and Royal Monceau , never ceases to impress us with his light and creative Mediterranean cuisine. He reveals the recipe for roasted cauliflower from the Sinner restaurant , a veggie dish worthy of the best Tel Aviv tables.

- Select a small cabbage - white flower between 600 and 700 g. Blanch it in cold water at the start with a pinch of coarse salt then add the thyme and bay leaf and cook for about 30 minutes after boiling.
- Drain the cauliflower and then brush it with olive oil. Preheat the oven to 180 ° / Th. 6) and put your cauliflower in the oven for 20 minutes, this will give it that roast and melted side inside.
- Take a bowl, put the sesame paste in it, then the olive oil and the lemon juice . Emulsify everything using a whisk.
- Serve the cauliflower seasoned with olive oil and fleur de sel. Rub it with a clove of garlic, add some chopped coriander and parsley, with sauce tahina.
