Veggie Pasta

This is the dish creating the buzz amongst twigs who wear a size 4. Normal… These veggie spaghettis are just as delicious as pasta… Without calories nor gluten and with extra vitamins. Yes, ma’am. The principle of these veggie pasta ? Colourful vegetables, cut in the shape of spaghettis with a spiralizer, the darling “pencil sharpener” of healthy-girls (starting with Gwyneth Paltrow) to be customized with goat cheese, parmesan and other sexy aromatics… Marabout has just published a book dedicated to this new healthy dish. Irresistible.

For 4 persons

Preparation : 20 minutes

Cooking : 15 minutes

Chisel the chives and set aside a small part for the decoration.

Chop up the mint leaves. Mix the goat cheese, the aromatic herbs and the lemon zest. Salt and pepper then roll in small golf-sized balls. Set aside in a cool place.

Prepare thin spaghettis of beet with the spiralizer. Heat the olive oil on medium hot flame and pan fry the spaghetti during 5 minutes, until they are tender. Melt the butter, on a very low flame in a small pot. Concoct the sauce by whipping the melted butter, the lemon juice and the mustard, until you get a vinaigrette. Mix the veggie spaghetti and the sauce. Salt and pepper.

In a pan on a high flame, cook the nuts without added fat for about 10 minutes, mixing them until they are golden and perfumed. Chop them up with a knife or in the blender.

Divide the spaghetti into 4 plates then place on top the goat balls, nuts and a little bit of chives.

½ citron lemon zest

1 tablespoon of olive oil

120 g of butter

40 ml of lemon juice

2 small tablespoons of Dijon mustard
