Nibble on seasonal veggies in sexy and comforting mode. Try this easy recipe of stuffed vegetables with Beaufort cheese, for a pleasurable moment!
For 4 persons
Wash the vegetables, pit the tomatoes, cut the round courgettes and the eggplants in chunks. Cut up the inside flesh and the other vegetables into cubes.
Pan fry at high flame, in olive oil, the onions and allow to golden for 3 min. Add the pieces of eggplant, courgette and 1 tablespoon of oil. Continue cooking for 5 min. 1 min before the end, add the tomatoes. Salt, pepper. Stop cooking and add the basil and the Beaufort cut in cubes.
Stuff all the vegetables and place them in a baking dish. Sprinkle with a dash of olive oil and bake 40 to 50 min in an oven preheated to 180°C.
