Heat the milk and butter together, being careful not to overheat the milk. The butter should be melted.
Pour the lukewarm milk over the dry mixture. Mix.
Pour in the yolks. Mix.
Incorporate the whipped egg whites - sparkling and not firm.
In a very hot pan, melt a nice knob of butter. Pour your dough. As soon as the dough bubbles, you can turn it over.
Once the pancake is golden brown on both sides, serve and enjoy with the fruits of your choice and maple syrup .
