Vegetable curry recipe

Cut the broccoli and fennel into pieces. Cook them in salted boiling water until they are tender, then cool them in ice water. Reserve a little water for cooking the vegetables.

Peel the pineapple and cut it into cubes. Rinse and drain the chickpeas .

Cook the basmati rice in boiling water for 15-18 minutes.

Prepare the in love sauce. Chop the onion and the garlic cloves . Brown them over medium heat with a drizzle of olive oil . Deglaze with the coconut milk , cream and a little cooking water from the vegetables. Add the curry paste , grated ginger , basil leaves, peanut puree and season with salt. Cook for about 10 min. Put everything in the blender.

Pour all the vegetables and the fresh pineapple into a dish. Pour over the hot sauce and sprinkle with chopped chives. Serve with the rice in a separate dish.
