Mosaic, the estate's restaurant, captivated us with its understated elegance and remarkable finesse. Voted the World's Best Female Chef in 2017, Chantel Dartnall presents a dinner of extraordinary delicacy. On the plate, botanical cuisine is executed with exceptional precision. The ten-course tasting menu unfolds like a story, where French culinary traditions meet the chef's international inspirations. Land and sea complement one another effortlessly, textures alternate between crispness and softness, and every dish achieves an almost perfect balance of freshness, acidity, and indulgence.

Among our favourites was The Alchemist's Infusion—Heritage Beetroot, White Balsamic, Vegetable Consommé—a deeply aromatic vegetable dish that perfectly encapsulates Mosaic's philosophy: allowing nature to speak without ever disguising it. Special mention also goes to the Sakura dessert, featuring Valrhona dark chocolate and cherry mousse. Beautifully balanced, light, and delicately sweet, it provides an elegant conclusion to the meal. Every Detail Matters

At Château des Tesnières, every moment feels like a seamless extension of dinner. After the final course comes the opportunity to discover the estate's remarkable wine cellar, ranked three times among the world's finest wine lists. Here, Cobus du Plessis, Chantel Dartnall's father, showcases both Europe's greatest vineyards and exceptional South African wines. The wine pairing, refreshed every three weeks according to the inspirations of the sommelier and the chef, reflects the same relentless pursuit of precision found throughout the entire experience.

The attention to detail continues the following morning with a breakfast that perfectly reflects the spirit of the house: delicate, balanced, and comforting, served with magical views over the gardens. We are still dreaming about the orange and cinnamon porridge, accompanied by an apple, cinnamon, and ginger infusion that almost made us forget about coffee.One final stroll through the grounds before setting off once again is enough to confirm what has already become clear: Château des Tesnières is far more than a gastronomic destination. It is a place where time slows down, where every thoughtful detail tells a story, and where each moment becomes a treasured memory.
