- For the confit . In a casserole dish, bring the onions to a boil with the sugar, vinegar, olive oil and water. Then let stew over low heat for an hour. Stir often.
- For the sandwich . Immerse the Montbéliard sausages in boiling water for 10 minutes, cut the baguettes in half, then open each section lengthwise. Spread each piece with the onion confit . Place a Montbéliard sausage in the center of each sandwich.
