This is the new avocado toast! The new gourmet and healthy obsession for breakfast.

For 4 people

Preparation :

In a bowl, beat the eggs , Parmesan and milk , salt and pepper and season with a few sprigs of chopped chives .

Peel and cut the avocado in half, then cut each half into thin slices. Season with salt and pepper .

In a skillet, brush the bottom with butter and pour in a quarter of the egg mixture .

Cook the omelet on both sides, then make 3 more with the remaining mixture.

Stuff each omelet with slices of avocado , arugula and Parmesan cheese .

Sprinkle with pink berries and serve.
