The ultimate detox: a nettles broth

Here is a very unusual broth that is creating quite a buzz, taken from the new detox book of the season… Careful, it’s heavy duty!

Nutritional benfits

NETTLE

It contains many minerals (calcium, chlorine, magnesium, manganese, potassium, sulfur, zinc, silicium and iron in important quantities), vitamins (B2, B5, B9, K, C and provitamin A), des trace elements (manganese, silica, potassium, sulfur) as well as chlorophyll.

CHERVIL

Rich in vitamin C, provitamin A, mineral salts and trace elements—it is diuretic, depurative and soothing

Preparation 20 min – Cooking 10 min

For four bowls

• Wash the chervil and chisel it. Wash the garlic and the onions, then mince them.

• Heat the oil in a pan. Simmer the garlic and the onions to  simmer for 1 minute without letting them color. Add the chervil, the vegetable broth and bring to a boil.

• Add coarse salt and the nettles, then cook for 2 minutes. Stir, rectify the seasoning and filer.

The hot tip: serve this broth with nettles chips.

If you have too many nettles, don’t throw them out ; put them in the oven, sprinkled with a dash of olive oil and sprinkled with salt to create chips. They will also be delicious when served in a quiche.
