A healthy veggie tartine

Spread the word, never has the tartine been so trendy. Strong Instagram potential, super easy to prepare, this tartine with whipped goat cheese, green peas and shrimp will be a big summer fave.

Recipe for 4 persons

Preparation:

In a pan on a low flame heat the butter, sugar, water.

Add the peas, salt, pepper and allow to simmer until the water is evaporated.

Incorporate the mint and set aside.

Peel the shrimp.

Mix the whipped plain goat cheese by Soignon with the lemon juice and a dash of olive oil. Toast the whole-wheat bread slides and spread it with a generous layer of the whipped lemony mixture.

Place the salad leaves on each slice of bread, add the peas and shrimp.

Sprinkle with lemon zests, then salt and pepper before serving.

You can add smoked or fresh raw salmon on the tartines in addition to the shrimp—a real delight!

Ingredients:

1 whipped plain goat cheese pot by Soignon

4 nice slices of whole-wheat bread

12 large shrimp

12 leaves of bib salad

½ lemon (zest and juice)

Salt and 5 bay pepper

Olive oil

Cooking the green peas:

200g of frozen peas

20g of butter

1 teaspoon of sugar

10cl water

Salt, ground pepper

4 leaves of chizeled mint
