Ingredients
- 150 g cottage cheese
- 100 g oat flour (or buckwheat flour for a gluten-free version)
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp cinnamon (optional)
- 1 tbsp maple syrup or honey (optional)
- 1 tsp vanilla extract (optional)
- 50 ml almond milk or water
- 1 tbsp coconut oil for cooking
Recipe
- In a blender or bowl, mix cottage cheese, eggs, oat flour, baking powder, cinnamon, vanilla, and maple syrup.
- Gradually add almond milk until you get a smooth, slightly thick batter.
- Heat a pan over medium heat with a bit of coconut oil.
- Pour a small ladle of batter into the pan and cook each pancake for 2 minutes per side, until golden and fluffy.
- Serve warm with fresh fruit, some plant-based yogurt, and a drizzle of maple syrup or almond butter.
