Recipe for ultra light crepes

My friends often ask me for my gluten-free recipe, without mil. Super simple.

For 4 big eaters:

Mix 200g or whole wheat rice flour, 100g of chestnut flour (Celnat), 2 tablespoons of olive oil, a pinch of salt, some vanilla extract, 3 eggs.

Then pour little by little the rice milk & almond, until you have a nice consistence for the crepes mixture.

Set aside.

Cook at high flame in coconut oil (or olive oil) !

I eat them with almond spread or cooked fresh fruit (without sugar).

Even those who resist free-gluten foods will not notice anything !
