The recipe for the asparagus pie
Place the wild garlic leaves in the bowl of the blender and mash them with the butter. Add the other ingredients and mix for 2 min. Pour a drizzle of cold water (approx. 5 cl) and mix again to obtain a ball. Film and place in the fridge for 1 hour. Preheat the oven to 180 ° C.
Fill a buttered mold with dough, prick it with a fork and bake for 10 min.
Steam the asparagus for 5 minutes.
Beat the ricotta and eggs in a bowl. Add salt and pepper. Spread wild garlic pesto on the tart base then pour the ricotta and eggs mixture. Arrange the asparagus on it. Bake for 30 min.
Sprinkle with generous shavings of Swiss PDO Emmentaler before serving with a nice salad.
