The famous Panster Madame© of Pancake Sisters

We have goods news for all those who are crazy English Muffins and croque-madame … This salty pancake with egg + cheddar + totally amazing ham is going to really help all the party-goers on the day after.

For 3 Pansters

1. The chives cream

In a small salad bowl, pour the cream cheese, the petits suisses, the lemon juice, the chizeled chives, salt and pepper. With an electric whisk, whip to obtain an airy cream.

Set aside.

2. The batter for salty pancakes

Preheat your pan on an average flame. Separate the egg whites from the yolks in two salad bowls. Mix the yolks, the milk and the oil using a whisk. Add the flour, the salt, the pepper and the sugar then whip until the batter is smooth. Mix well and set aside. With an electric whisk, beat the egg whites into snow peaks and incorporate them in the batter with a spatula.

3. Cooking the pancakes and presentation

Slightly oil your pan and pour the batter with a ladle order to form pancakes with a 10 cm diameter. As soon as the bubbles appear, turn it over with a spatula. Allow to golden.

How to create the Panster© !

In a plate, place a salty pancake. Spread the chives cream over it, place a slice of cheddar then two slices of raw ham. Spread the inside of the other salty pancake and close the Panster©. Place a fried egg on top of the Panster©.

Organic eggs: 2+3

Cream cheese: 120g

Petits-suisses: 120g

Organic milk: 145 ml

Raisin pit oil: 10ml

Organic flour: 130g

Cassonade sugar: 5g

Salt: 3g + 1g for the cream

Ground grey pepper: 0.5g + 0.5g for the cream

Oil for the pan

Raw ham: 6 slices

Cheddar: 2 slices

Yellow lemon: ¼ for the juice

Chives: ¼ bunch
