From melting hearts and praline chocolates to tangy fruits, ultra-creamy entremets and irresistibly nostalgic treats : for Valentine’s Day, pastry chefs go all out to deliver a true pleasure hit to love-struck Parisians. With or without a significant other, February 14th is the perfect excuse to go all in on chocolates and jaw-dropping cakes. The Do It Team has selected its editorial favourites — sweet desserts designed to make hearts (and senses) swoon.
The Fruitiest

This year, chef Joris Theysset, at the helm of the kitchens at Comptoir du Ritz, unveils a creation celebrating the ultimate symbol of love : the heart. Apple takes center stage, with every piece carefully cut and slowly cooked in its caramelised juices, shaping this little jewel. Beneath lies a luscious caramel crémeux, a light vanilla-infused whipped cream, and a crisp shortbread base for the perfect crunch. For a fruity and sweet Valentine’s Day, head to Jeffrey Cagnes’ boutiques to discover his exclusive creation : a hibiscus tart. Beneath delicately hibiscus-infused apples sits an intense vanilla crémeux, bissap confit, and a light vanilla-mascarpone whipped cream. All of this rests on a crisp salted shortbread base for a texture combo to die for. A true delight to share (or not). Hibiscus tart for 2: €19. Available in boutiques from February 10th to 15th only. Hugues Pouget, who has just opened the new must-visit sweet spot in Paris’s 6th arrondissement, promises to delight couples this February 14th. Choose between the grapefruit tart — made with shortcrust pastry, almond cream with lemon zest, bitter grapefruit crémeux and a fresh, nectar-like centre — or the chef’s iconic mango petal tart, now available in a sharing version. The centerpiece of La Grande Épiceries’ Valentine’s Day collection? A cake that is fresh, indulgent and deeply addictive. It features whipped Tanzanian vanilla ganache, fresh mango cubes, delicate vanilla sponge and a coconut-passion fruit crunch — a flawless match. The Most Couture

Valentine’s Day creations by pastry chef Christophe Michalak, drawing on his 15 years at Plaza Athénée, are sure to impress your loved one. Not one, not two, but three heart-shaped tart-style entremets are available in three flavours: crème brûlée, chocolate praline and raspberry. The common thread? An ultra-cute heart shape with a flawless glaze made from natural colourings. Inside, delicate ganaches and flavoured creams sit atop a Basque-style sweet pastry and Nantes biscuit. Can’t choose? To celebrate love properly, Pierre Hermé conjugates the verb “aiMer” endlessly. His Ispahan Cœurs Mêlés revisits the Maison’s iconic floral-fruit pairing in a dessert that radiates romance. This heart-shaped entremets hides a rose-petal cream, raspberry-lychee compote and macaron biscuit. Bonus : illustrator Julie Serre designed an abstract, dreamlike and intriguing visual universe for the collection. Ispahan Cœurs Mêlés : €34 for 2–3 people. For Valentine’s Day, Méert, born in the heart of Old Lille, offers a parade of indulgent treats. A perfect opportunity to pick up the box of its legendary Madagascar vanilla waffles. This year also features a limited-edition Valentine’s cake (€20.50), dressed in pink and white. Inside: mascarpone-cherry crémeux, cherry confit, almond biscuit, tea mousse, plus a crunchy muesli and dulcey chocolate base. For extra cheekiness, add pink marshmallow bears (€9.90/100g) and praline-almond & passion ganache heart candies (€15/12).

The Most Nostalgic

Provençal bakery Pompette! launches a limited-edition Valentine’s collection of entremets. These delicate flower-shaped desserts come in three flavours: cocoa velvet (chocolate, praline, cocoa Breton crunch), white pearl (vanilla and salted butter caramel), and love flower (pistachio, raspberry, granola crunch). 20 rue du Renard, Paris 4e. American doughnut masters Krispy Kreme unveil four exclusive kawaii-style recipes. Choose between You’re Beary Sweet (pistachio filling, chocolate glaze), Love You a Choco Lot (cookie-flavoured filling), XOXO (raspberry-strawberry) or Sprinkled With Love (vanilla). 12 passage de la Canopée, Paris 1er. Panettone king Christophe Louie strikes again with Le Petit Louie, a 500g Bauletto inspired by Italian brioche. The Best Entremets

Angelina draws inspiration from a ball of yarn for Au fil de l’Amour, a woven heart symbolising love that grows over time. Inside : vanilla mousse, vibrant red berry compote and a generous almond crunch, all wrapped in a velvety chocolate shell. Available until February 15th. €9 in boutique, €11.50 in tea room. Named Pastry Chef of the Year two years in a row, Nina Métayer reveals a soft and elegant Valentine’s collection centred on Tahitian vanilla. Her Vanilla-Pandan entremets features toasted millet crunch, vanilla sponge, pandan-infused crémeux and dark chocolate whipped ganache. Maison Caffet takes inspiration from Cupid with a heart-shaped entremets wrapped in a chocolate shell. The Most Chocolatey

For Valentine’s Day, Chocolats de Yannick Alléno present a love declaration rooted in culinary craftsmanship. A box of 8 heart-shaped chocolates hides delightful surprises: velvety fillings with puffed rice and Tahitian vanilla caviar, and glossy chocolates enhanced with Iranian pistachio cream (€25). The Bouleau Heart combines candied lemon and yuzu zest under a dark chocolate shell (€19). The Duo d’Amour unites both creations (€39). Available until February 22nd in boutiques and online.
Nothing says “I love you” like a box of chocolates — and La Maison du Chocolat agrees. Choose between heart-shaped boxes of dark, milk, ganache or praline chocolates: 48 pieces (€79) or 17 bites (€36). The Je T’aime box (€28) also includes a pierced dark chocolate plaque engraved “je t’aime”.
