Delicate cocktails and refined tapas to be enjoyed while listening to a cool and trendy playlist: here is the ideal spot to impress a target!

Facing the starred restaurant Neso at the beginning of the Rue Papillon, Neso 2 is the promise of an outstanding food experience, whose streamlined decor in wood and stone sets forth a keen sense of taste. This new address is the third baby of Topchef Guillaume Sanchez, who has made product excellence his great speciality.

Sublimating the sublime

When he has a top notch product in his hand, the chef turns it around in many ways until he figures out how he could make it even more exceptional. Fermentation, hey there, the chef has a baker’s C.A.P diploma.), infusion, rounding-out, smoking. No old fashioned process of one inspired from molecular cuisine is too challenging to have a result with an unsuspected savour.

No need to turn all the pages looking for mains dishes and desserts, the willingly short menu changes often in keeping with the seasons only offers wild cocktails for twelve tapas to share.

Under the fork

Nothing is lost, everything is transformed by this recycling virtuoso who has linked up his two neighbouring cuisines so as not to waste.

The result is a fluffy maritime sandwich with smoked eel (€12), a radish-butter with scale on bread with fermented turnip water (€8), three ravioles of lobster and their broth (€8), house poutargue of turbot fish eggs on nut crackers (€7) or a yellow sea bass, garlic and capers (€8). In addition, N° 2 ou 3 oysters, for 6 (€18 or €22) and caviar, fresh cream for deluxe gals (€20).

Nota bene: while the portions are to be enjoyed slowly —in keeping with the delicate dishes, we suggest ordering three or four tapas per person.

Inside the glass

Ok, we knew Guillaume Sanchez’s cuisine was amazing. But his second feat is the discovery of incredible cocktails, you could almost and all made French alcohols.

Special kudos for Umami, the star of the menu, but those who wanted to know or rediscover the 5th savour inspired from Japon: vodka quinoa, French sake, caper, honey water, wild origano flower and fennel (€15), that is presented with a green ice cube and an oily drop on the  surface. Wahou.
