A tasty chicken served in a pineapple !

In fact this is a classic dinner party dish. The pineapple gives to the chicken its tropical flavour and serves as a container. How to choose a good pineapple? A ripe pineapple has a nice scent and a lovely yellow colour.

For 2 persons

1. With a sharp knife, cut the pineapple in half lengthwise. With the tip of the knife, cut notches in the pulp along the edges without cutting the shell. Criss-cross each half with a knife, then remove the pineapple cubes. Throw out the central hard part and set aside the pineapple cubes.2. Heat the oil on an average flame in a big frying pan. Place the chicken in the oil, salt and pepper. Cook for 10 minutes until everything is golden. Remove and set aside.3. Add the pineapple cubes, the hoisin sauce, the soya sauce, the brown sugar and the garlic paste, cook for a few minutes. Incorporate the chicken broth. Bring to a boil and allow to simmer, stirring from time to time, until the sauce has reduced and thickened.

4. Put the chicken back in the pan and stir to cover it with sauce. Garnish the emptied pineapple shells by adding rice and sesame seeds.

Ingredients

- 1 big pineapple

- 2 tablespoons of peanut oil or another vegetal oil

- 6 deboned chicken legs without the skin, diced up in cubes

- Salt/Pepper

- 1 tablespoon of hoisin sauce

- 1 tablespoon of soya sauce

- 1 tablespoon of brown sugar

- 1 c tablespoon of garlic paste

- 125 ml of chicken broth

- Serving rice

- Sesame seeds
