It’s the big trend. There is not chef or a hip bar that does not serve these irresistible crunchies. Here is how to easily make them at home.
Preparation: 20 minutes
Cooking: 30 minutes
For 4 persons (20 to 24 nuggets)
Cook the potatoes in salty water, start in cold water, 20 minutes after boiling, drains, allow to cool down and crush with a fork.
Mix the crushed potatoes, the minced onions, the chizeled herbs and the chopped veal, salt and pepper, add the mozzarella and the grated parmesan, mix well and make the balls.
In turn, dip the balls in the flour, the beaten eggs and the bread crumbs,
Heat the olive oil and allow the balls to golden on every side, about 10 minutes.
Serve the veal croquettes with a fresh cream sauce and cumin.
Tip from the chef:
For a different taste, slightly pan fry the chopped veal and the onions before mixing with the mashed potatoes.
