How to make honey-roasted duck and carrot aiguillettes?

The duck with honey is THE ultimate treat. So when it comes with carrots cooked in olive oil , we are in heaven!

  • Preheat the oven to 190 ° C.

  • Wash the carrots , shorten the tops. Mix oil and honey and brush carrots and garlic cloves. Season with salt and pepper, place on a baking sheet and bake for 25 minutes (check the doneness by inserting a knife into the carrots).
  • 10 min before the carrots are finished cooking, heat the olive oil in a pan with the sprig of rosemary . Brown the duck aiguillettes for 3 min on each side, salt and pepper, add honey, cook for 1 min then deglaze with vinegar. Serve the aiguillettes with the roasted carrots.
