How to make real homemade miso soup?

Did you know that a bowl of miso soup introduces every daily Japanese meal, from morning to night? Normal her miraculous virtues (all digestive umami taste, energy booster, anti-cancer) make her a real health ally, and a kiff diet without gluten or lactose. In short: we abuse it with our eyes closed.

Preparation : 15 minutes

Cooking : 40 minutes

For the dashi (basic stock), place all the ingredients in a saucepan, bring to a boil and simmer for 30 minutes. Let cool and remove the seaweed and mushrooms.

Place the shiitake and butternut in the steamer for 5 minutes, then add the leek and continue cooking for 5 more minutes.

Heat the broth and add the seaweed.

When it is hot, turn off the heat and dilute the miso.

Divide the vegetables between the bowls and pour the broth over them.

Offer the gari and the raw green of the leek at your discretion.
