Prepare the seasoning. Assemble all the spices in a wok and place on an average flame for 5 min stirring often. When a strong slightly prickly smell occurs, add the salt. Turn off the flame and pour everything in a coffee or spice mill. Grind until the powder becomes quite fine.
Cut the squids in 0,5 cm wide strips and drain with absorbing paper. Mince the herbs finely. Mix with the pimento sauce.
Peel and thinly chop the garlic. Mix with the flours in a salad bowl, then add the water little by little until you obtain a batter with the texture of liquid fresh cream.
In a pot, boil the frying oil. Dip the squid strips one by one in the batter, then in the hot oil. Cook 3 or 4 min, until they are golden. Remove from the frying oil using the skimmer and place on absorbing paper. Sprinkle with the spicy seasoning.
Serve warm with the pimento and herb sauce.
You can make the same recipe with shrimp, octopus or vegetables (sweet potato, green bean, mini corn cob, etc.).
