A legendary tomato and pepper shakshuka

Ingredients to buy

For one serving :

  • 1 red onion
  • 1 garlic clove
  • 120g cherry tomatoes
  • ½ bell pepper
  • 2 tbsp olive oil
  • 1 tbsp sugar
  • 200g tomato purée
  • 1 tsp mild chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 2 tsp dried thyme
  • Salt and pepper
  • 2 eggs
  • 50g feta
  • ½ bunch of cilantro (or herbs of your choice)
  • A few basil leaves
 

The recipe

  1. Peel and finely chop the onion and garlic.
  2. Wash the cherry tomatoes and bell pepper.
  3. Slice the bell pepper into strips and cut the cherry tomatoes in half.
  4. In a small pan, heat the olive oil over medium-high heat. When hot, add the onion and garlic, and let them brown for 2-3 minutes, stirring regularly. Reduce to medium heat, add the bell pepper strips and sugar, and cook for 10 minutes, stirring regularly.
  5. Pour in the tomato purée and reduce to low heat.
  6. Add the spices : chili powder, paprika, cumin, thyme, then salt and pepper to taste.
  7. Add 100g of cherry tomatoes.
  8. Let the sauce simmer for 15 minutes.
  9. Using a spoon, make a small well in the sauce. Crack an egg into the center. Do the same for the second egg. Lightly salt and pepper the eggs, cover the pan, and continue cooking on very low heat for 10 minutes. At the end of cooking, the yolk should be runny. If you prefer it more cooked, continue cooking for a few more minutes.
  10. Remove from heat.
  11. You can enjoy the shakshuka directly in the pan or gently slide it into a shallow dish.
  12. Crumble the feta and chop the herbs over the dish.

Grousset's Tip : Enjoy the shakshuka with a slice of bread drizzled with olive oil, toasted in the oven for 5-6 minutes at 180°C for extra deliciousness.
