Cut the passion fruit in two, remove the flesh.
In a pan, pour the milk, add the vanilla, then the granulated sugar.
Bring to a boil. Pour the Japanese pearls, mix and cook for 5 minutes, stirring constantly. Remove the pan from the fire, allow to sit for 15 minutes then cook at low temperature for 2 minutes. Cut the candied ginger in strips and place in the milk.
Allow the milk soup to warm up. Serve in small bowls. Add the passion fruit.
