Spread the fresh goat cheese on the sandwich bread.

Cut the xi from Périgord in slices and spread them on 6 sandwich slices.

Cover the other slices with the ham. Assemble the croque-monsieur.

Heat up a croque-monsieur device and set up the sandwiches. Serve immediately when the cheese begins to melt.

Tip: you can also make this recipe with boxed goat cheese, Cabécou d’Autan or Rocamadour.
