Brunch: we test Alexia Duchêne's Halloumuffin

What if we copied Alexia Duchêne's special containment recipe from the book À La Maison (€ 24.90)? Its author Victoire Loup joined forces with Human Humans for their first publishing project all of the profits from which are redistributed to Ernest, a charity providing food aid to families in difficult circumstances.

Halloumi muffin recipe

Using a mandolin, cut the cucumber into slices 2 mm thick. Mix them with the yogurt , 1 tsp. tablespoons of olive oil , a squeeze of lemon and salt. Cut the halloumi into 1 cm slices and brown in a hot pan with a drizzle of olive oil. Cut the muffin in half and toast it. Fry the eggs, making sure that the yolks are runny but the whites are almost translucent.

Assemble each sandwich with a slice of muffin, a thin layer of harissa , cucumber salad, halloumi slices then the egg. To finish, sprinkle with coriander leaves and lemon juice. A little fleur de sel and let's go, you can put a slice of muffin on top. All you have to do is sit down and enjoy it.
