Home-made is the big trend for back to school. Here is the stylish and Instagrammable recipe of california rolls imagined by Cathleen Clarity , to compete at home with the most popular sushi bars in Paris .

For 4 people.
Prepare the sushi rice . Wash the rice several times under running water . Then put it in a saucepan and cover with water . Bring to the boil then lower the heat, cover and cook for 15 min. Remove from the heat and let stand, covered, for 10 minutes.
In a small saucepan, mix the rice vinegar with the sugar and salt and heat for a few minutes until the sugar is melted. Pour over the rice and mix gently.
Let cool to room temperature.
Pour the lemon juice over the avocado slices to prevent them from oxidizing. Mix the crab meat and the spicy mayonnaise . Cover a small sushi mat with plastic wrap. Cut the nori sheets in half and lay the shiny side down on the mat. Moisten your fingers with water and place a bed of rice on the nori sheet .
Sprinkle with sesame seeds .
Turn the nori sheet over . Place a little cucumber , avocado slices and crab meat on the center of the leaf . Roll tightly.
Repeat the operation until all the ingredients are used up.
Then cut the rolls into 6 pieces.
Serve with ginger strips , wasabi and soy sauce .
