We like it cooked, hate it in a salad, or the opposite.... I suggest trying it caramelized with orange zests: and handsome and yummy duo.

For 4 persons
1. Cut the endives in two.
2. Heat the butter in a big pan and colour the endives during 5 minutes. Salt, pepper and set aside in a plate.
3. Pour in a pan the juice and the grated zest of orange as well as the sugar and boil 1 to 2 minutes in order to obtain a slightly syrupy sauce. Put back the endives in the pan, add a pinch of Espelette pimento and mix to wrap them with sauces before serving.
Small plus: these endives caramelized with orange are the perfect side for a grilled filet of salmon of scallops on a festive occasion.
